Ofte v\u00e6kker det undren. Navnet. Camillos K\u00f8kken. Hvorfor? Hvem er han? Camillo? Er det dig, og er du egentlig italiener? Svarene er ganske enkle, og de findes i Jylland.<\/p>\n\n\n\n

Camillo var min bedstefar. Han blev f\u00f8dt i Holstebro 25. juli 1896. Camillo var \u2018kun\u2019 et mellemnavn. Niels hed han. Niels Camillo Ager Smidstrup. Som barn syntes jeg, det der \u00adCamillo l\u00f8d \u00admeget, meget eksotisk. Som \u00adnoget, der m\u00e5ske kom helt nede fra Sydeuropa. Sandsynligvis var det hans mor, der sneg det sydeurop\u00e6iskklingende navn Camillo ind. Hun, min oldemor, hed Camilla \u2013 lille Niels var en eftern\u00f8ler i en s\u00f8skendeflok p\u00e5 fire.<\/p>\n\n\n\n

Han blev k\u00f8bmand i en lille by, Vaarst, syd for Limfjorden. Fik to b\u00f8rn; Oda og Niels (min far). Senere overlod han k\u00f8bmandsbutikken i Nordjylland til mine for\u00e6ldre, og pensionerede sig med egen iskiosk.<\/p>\n\n\n\n

Han elskede mad, min bedstefar. Jeg husker stadig med lige dele gru og fascination, hvordan bedstemor Marie til frokostbordet bar et fad med syltede griset\u00e6er ind foran ham. Hvordan han lyste op, \u00f8sede sennep p\u00e5 og spiste med stort velbehag og store lyde \u2013 med syltede r\u00f8dbeder og groft rugbr\u00f8d til. Den tykke mand. Lille og tynd sad jeg over for ham, kunne ikke l\u00f8srive mig. Jeg blev ogs\u00e5 fork\u00e6let af bedstemor; tynde skiver franskbr\u00f8d med sm\u00f8r og det farinsukker, der kunne h\u00e6nge ved sm\u00f8rret.<\/p>\n\n\n

Bedstefar har v\u00e6ret d\u00f8d i mange \u00e5r nu, han forlod spisebordet i midten af halvfjerdserne. Senere kom den tid, hvor jeg \u2018overtog\u2019 navnet Camillo. Gjorde det til mit alter ego og skabte Camillos K\u00f8kken.<\/p>\n\n\n\n

Mon ikke det vil g\u00f8re min bedste\u00adfar stolt at vide, at Camillo K\u00f8kken i dag bl.a. st\u00e5r bag tre kogeb\u00f8ger, masser af pop-up middage med ‘mad, der f\u00e5r folk til at tale sammen’ i Danmark og i det store udland \u2013 og fire \u00e5rs sommerrestaurant i Nordjylland. Selv om han \u00adsikkert ville rynke p\u00e5 n\u00e6sen over meget af den mad, vi pr\u00e6senterer og serverer. Der er sket meget p\u00e5 den danske madscene, siden Niels Camillo rejste sig fra spisebordet.<\/p>\n\n\n\n
